In commemoration of the “Post-Impressionism: Beyond Appearances” exhibition, Louvre Abu Dhabi has collaborated with Fouquet’s to present an exclusive, art-inspired dining experience.
Chef Balveer Balkissoon’s four-course menu brings the works of Post-Impressionist artists like Paul Cézanne, Paul Gauguin, Vincent van Gogh, and Georges Seurat to life through innovative culinary interpretations.
Speaking to Aletihad regarding the experience, Chef Balkissoon, discussing the incorporation of local flavours into his dishes, said: “The lamb loin dish incorporates local spices that resonate with Middle Eastern palates. The use of fresh, local produce ensures a connection to Abu Dhabi’s vibrant food culture.”
He discussed the challenges of ensuring visually striking dishes while maintaining consistency and taste.
Chef Balkissoon further pointed to one of his dishes, saying: “It vividly reflects Van Gogh’s landscapes and his ability to evoke emotion through vibrant hues”, and another, to “Cézanne’s meticulous still-life paintings. Its layered composition mirrors the geometric precision he brought to his artwork”.
Balancing creativity with catering to diverse tastes, he explained: “By blending bold, artistic concepts with familiar flavours, the menu appeals to a wide range of palates while still maintaining its innovative edge.”
The chef noted that the menu planner prioritises sustainability by sourcing seasonal and local ingredients to minimise environmental impact and reduce food waste.
“The menu reflects a dialogue between art and food, using artworks as direct inspiration for the dishes, ensuring synergy between the culinary and artistic realms”, Chef Balkissoon commented on the collaboration between art and taste, where food serves as a storytelling platform using visual and emotional elements.
Regarding Abu Dhabi’s influence on his dishes, he pointed out: "Abu Dhabi’s diverse cultural heritage inspires us to combine global culinary techniques with local flavours and traditions, creating a fusion of authenticity and innovation."
Chef Balkissoon also shared a dish that reflects Abu Dhabi’s heritage: “A lamb dish infused with dates, a key ingredient in Emirati cuisine, showcasing the region’s culinary identity.”
Abu Dhabi’s culinary innovation is a result of its blend of tradition and modernity, which attracts global attention and talent, the chef spotlighted.
“My vision is to create menus that reflect the richness of Abu Dhabi’s heritage while integrating global culinary trends, ensuring it becomes a sought-after culinary destination worldwide,” Chef Balkissoon noted regarding his vision for elevating Abu Dhabi’s food culture.
The experience is available until February 9, 2025, offering a fusion of visual and culinary art.
